Chapter 14: Line Rules
At four o'clock the whole line stood in a row on the kitchen tiles with their arms at their sides.
Nine cooks, two dishwashers, a runner in a bow tie.
Nobody was looking at the floor.
They were all looking at Hank, and he was looking at me.
"Lena asked for this," I said. "So Lena goes first."
Lena stepped forward in her white coat, with her bandanna tied low.
She had a small paper card in her hand.
"Okay," she said. "Here's how tonight works."
Her voice was flat and plain, the same voice she used for ordering fish.
"If you need something, you say what you need, one time, at normal volume. The person says heard. Then it gets done."
"And if it doesn't?" said a line cook with a shaved head.
"Then you say it again, at normal volume. And you tell me."
"That's all?"
