Chapter 18: Pancakes and a Goldfish

Polly's real birthday party started at four, after the bakery closed.

She had taken over Pomeroy's front room with a roll of pink streamers and a clipboard.

"Guests sit by number," she announced. "Dee is one. The nurse is two. The big guard is three."

"I'm four?" said the lawyer.

"You're four because you're always on the phone."

The big guard from the Pendelton Wing had brought a present wrapped in newspaper.

He sat at his number with his hands on his knees and a paper crown that did not fit over his ears.

The nurse had baked a lemon cake.

Polly inspected it for a full minute.

"It's yellow," she said.

"It's lemon, sweetheart."

"I'm going to like it," Polly decided, and the nurse had to look out the window.

Nathaniel worked the griddle in the back kitchen, in an apron that said POMEROY'S in red thread.

Dee stood behind him with her arms folded.

"That's the fourth one on the floor," she said.

"It's flipping better."

"It's flipping into the trash."

"I'm learning."

"You're a thirty-five-year-old man, and you can run a company that ships forty thousand containers a month, and you cannot flip a pancake."

"It's a different skill."

"It's a skill you're missing."

He lifted one, flipped it, and caught it on the spatula in a perfect golden circle.
