Chapter 19: Midnight Tarts
The kitchen was dark except for one lamp.
The Queen Mother stood beside the big prep table in a black gown, with her sleeves rolled to the elbow.
She had flour on her wrist already.
"You're late," she said. "It is four minutes past."
"Your Majesty, I was in your sitting room."
Her eyebrow went up a hair, and then came down again very slowly.
"I see," she said. "I will have the chair cleaned."
My face went hot to the roots of my curls.
"Come here," said the queen. "I would like to learn to make your tart."
I stared at her.
"At midnight?"
"There is nobody awake to see me do it badly."
I washed my hands and gave her an apron.
She tied it herself, with crisp, practiced knots.
Then she stood in front of the butter and the flour.
"How much?" she said.
"Rub the butter in until it looks like crumbs."
She rubbed.
It looked like gravel.
"Lighter," I said. "Don't squeeze it. Use your fingertips."
"My fingertips are not accustomed to this."
"They look like they used to be."
The queen's hands stopped.
