Chapter 13: Two Halves

They did not sleep that night.

They sat on the tatami in the suite with the lamp between them and the green cloth open on the floor.

Sakura turned the pages and Yuzu read over her shoulder, with her chin almost on her collarbone.

Every page held one dish.

On the left, in the upright hand, was a sauce, a broth or a cure, with the amounts in grams.

On the right, in the slanting hand, was the fire: how long to grill, how hot, when to turn.

"It's split," Yuzu said. "Every single one."

"Haruko did the front of the dish."

"And my grandmother did the back." Yuzu ran a burned finger down the margin. "Look. She wrote 'Your sauce is too sweet' here, and your grandmother wrote 'Then grill it properly' under it."

Sakura laughed, and then her throat closed.

"They argued on the page."

"For years, by the look of it."

The ink changed from black to blue on the thirtieth page, and the handwriting grew older.

Then, near the end, the two hands wrote the same line at the top of a page, one under the other.

Never cook one alone.

Yuzu stopped breathing.

Sakura put her hand flat on the paper.

"It doesn't mean the dishes need two names," she said slowly. "It means they need two people at the stove."

"A sauce half and a grill half." Yuzu's voice was thin. "Timed against each other. One cook can't do both and keep them right."

"Is that true?"

"I don't know. I've never tried."
