Chapter 20: First Boil
The first boil of the year began at dusk, and by midnight the sugar shack was a cave of steam and firelight.
Remy fed the arch with split maple.
The long steel pan rolled and hissed over the flames, and the sap in it turned from water to gold.
The air was so thick and sweet that I could taste it on my lips.
Alexis stood at the draw-off with a tin cup, and Hugo held the thermometer up to the lantern.
"Two degrees over," Hugo said. "Now."
Alexis opened the valve.
A thread of syrup ran into the cup, dark and clear and gleaming.
He took a sip and shut his eyes.
"Oh, my God," he said. "Mimi. Come here."
He tipped the rest into my mouth.
It was warm and sweet and so rich that I moaned out loud.
"You have syrup on your chin," Remy said, from the fire.
"Do I?"
"You do."
He did not come to wipe it.
He stood with the poker in his hand and the firelight on his shoulders, and watched me.
I felt his want settle on my skin, as warm as the heat from the pan.
I looked at the jar Hugo had filled and set on the plank table.
I looked at the three of them, and I made up my mind.
"Take your shirts off," I said.
"Why?" said Alexis, delighted.
