Chapter 19: Flour
On the first Sunday in February I made bread in the Holy Rosary hall kitchen with three old women watching me.
They sat in a row on wooden stools by the ovens, in black lace and orthopedic shoes, with their purses on their knees.
They had not offered to help.
Nonna had told me they never did.
"The head makes the bread," she had said at four that morning. "The rest watch."
The kitchen was long and white and cold, and it smelled of old yeast and floor soap.
A steel table ran down the middle of it.
On the table lay the fifty-pound sacks of flour that Ronan had carried in from his truck.
He set the last one down with a grunt.
White dust rose around his arms.
"That's all of them," he said.
"Thank you."
"Is there anything else I can lift for the Table?"
One of the grandmothers coughed behind her hand.
I turned my back on all three of them and slit the first sack with my father's pocketknife.
I measured the flour into the big steel bowl by the scoop.
I added salt and water and the starter Nonna had kept alive in a crock for forty years.
