Chapter 20: The Gala
The gala was held in the grand ballroom of the Greyport Inn, under three chandeliers.
From the kitchen I could hear it through the swinging door: three hundred voices, a string quartet, silver on china.
My father stood at the dish station in a borrowed white jacket two sizes too small.
Brooke's mother had looked him over and said, "Who's the door?"
"He's with me," I said.
"Can he scrub?"
"He's a foreman."
"Good enough."
He had been scrubbing sheet pans for three hours without a word.
At eight o'clock the string quartet stopped, and a clear tenor voice came through the wall.
"Friends. Let me cook for you."
I knew that voice.
I had heard it say, "My own hands," in a hall full of pumpkin.
Through the round window in the door I watched the trustee walk to a station at the front of the ballroom, a stove on a rolling cart and a marble board.
He was a handsome man of sixty with white hair and a spotless chef's jacket.
He rolled out his dough and cut it and shaped it into little rings while the donors applauded.
He did not look like a man with anything on his conscience.
"Short ribs," Brooke's mother said at my shoulder. "Plate them. Now."
I plated the head table first, laying the meat on the polenta and spooning the wine sauce around it with my left hand.
The trustee's plate was the first, at the center, with a sprig of thyme on it.
"Yours," Brooke whispered.
She picked it up on a silver tray.
"Wait," I said.
I went to my father.
He put down the pan.
His hands were wet and red from the water. He wiped the right one on his apron and held it out.
