Chapter 15: Staff Meal
"Sixty-one hundred," the sous chef said. "For all eleven, net. That's two weeks, because the opening slid."
"Ellory," Kendrick said. "Put that away. This is between me and my people."
"Your people ate staff meal out of their own pockets all week," the sous chef said, without looking at him.
It was the quietest sentence I had ever heard cut a man.
I held up the envelope.
"This is a cashier's check," I said. "I can't hand it to you in an alley at ten at night."
"Then it's nothing," said the young server, and his voice shook.
"It's Monday at eight-thirty. The bank opens, I cash it, and everybody who's owed comes to the sign shop on South Second Street."
"You'll be paid in cash, to the dollar, and I'll stand there while you count it."
"Why would you?" the sous chef said.
"Because I know what it's like to be thanked instead of paid."
Maddox spoke from the truck, to nobody in particular.
"And come hungry," he said. "I'll cook."
Something went through the doorway.
